We collaborate closely with Big Fish Farms that share our dedication to environmental stewardship and humane practices.

Our partner farm utilizes a unique ranching approach to raise Paddlefish, allowing these majestic fish ample space to thrive in natural lake environments, with densities as low as 10 to 20 fish per water acre. This method, which we refer to as "Free Range Caviar," ensures the fish can swim freely and grow in conditions that closely mimic their natural habitat. Unlike conventional aquaculture that relies on tank systems and a diet of pelleted food, our Paddlefish forage naturally on abundant zooplankton in the lakes.

The Paddlefish are introduced to these lakes once they reach about 18 inches in length, a size at which they are safe from most natural predators. These conditions are ideal as they allow Paddlefish to exhibit natural behaviors and growth patterns over the next ten years, ensuring the caviar produced is of the highest quality.

Harvesting is done with precision and care, using specialized gear that prevents harm to smaller fish and ensures only the intended Paddlefish are collected. The caviar is then processed using a blend of ancient Jurassic Period salts, tailored to enhance the unique flavor profile of each batch, depending on the specific lake's characteristics.
